Rate My Meals : 2011-04-18

I was planning on meeting a friend and former co-worker at a bar after work tomorrow but I just canceled because of the imminent snowstorm scheduled to hit Minnesota. 6-10 inches in Southern MN where I was planning to be - but I'm staying up in the Cities now. Looks like only 3-5 inches up here. Still, I had to pull down the snow shovel I had already put up in the garage rafters. Sorry to my fellow Minnesotans - I clearly jinxed us when I cleaned up the garage last week. Bummed I won't be getting out but happy in that it will make it easier to hit my eating goals for the week without being in a bar.

So, another week, another attempt at a #7daychip from Brad Gansberg. I've got no excuses this week, and I have a good plan so I think I might make it this time.

Here's what I had to eat on Monday:

Monday Meals

Breakfast was a banana-nut muffin.

Yesterday I went grocery shopping and did a little prep for the week by poaching some chicken breasts in milk, wine and Italian herbs. Chilled they make a fine addition to a bento box lunch, which today consisted of a sliced chilled poached chicken breast on a bed of baby arugula, a side of poppy seed dressing, some tabbouleh from the local deli, 6 wheat thins with a couple small chunks of cheese, and some red grapes. Actually I think they were advertised as black grapes. They weren't very good though; not ripe enough.

For dessert I had a very small piece of tiramisu which I had made the night before (check the recipe from Ree). I'm responsible for dessert on Easter and decided I wanted to bring tiramisu, which I have never made before. So I did a test run and brought the pan into work so I wouldn't be tempted by it at home. But I snuck a small corner piece today. I'm going to switch to brandy instead of marsala for Easter but otherwise the recipe was perfect and it turned out great.

For dinner I had a small plate of leftover chicken and spicy noodles from Pei Wei, washed down with a Boddington's (Beer Advocate hates it, but I like it occasionally). Yogurt for dessert.

So that's yet another Day One in my never-ending quest to bag a #7daychip and get back on track.

P.S. - Thinking of trying to figure out how many calories I ate? Well if you are you have too much free time! But seriously, one thing you should know - I'm trying out a new strategy this week: not eating all of my food. Check out my leftovers post on fatbloggers.net to see what I mean.

I love your photo collages. Do you make them by hand, or use a program?

Thanks David - I use Google Picasa to make the photo collages, they have a really simple tool to do these, mosaics, picture piles, etc.
